This extra creamy and delicious pasta dish is inspired by the Italian pasta alla boscaiola. We have totally veganised this recipe and the result is much, much better than the “real deal”.

We like it because it is an excellent source of carbohydrates – especially if you go for whole grain pasta – packed with proteins coming from the green peas, our Friendly Ham and the mushrooms. Plus, it is fast and easy to make!

For a complete meal, we suggest to serve it with a side of tomatoes & rocket salad.

Pasta alla Boscaiola

  • Ingredients
  • 180 g pasta (any kind will do)
  • 130 g Friendly Ham (equivalent to 1 packet)
  • 1 cup frozen green peas
  • 1 onion
  • 1 tbsp olive oil or coconut oil
  • 1 cup champignons
  • 1/2 cup soy or coconut cream
  • 1/2 tsp black pepper powder (use less if you do not like it too spicy)
  • Salt (add to taste)
  • Parsley to serve

Finely chop the onion and saute it in a pan with 1 T of olive oil or coconut oil. Once the onion is golden, cut our Friendly Ham slices in thin strips and each champignon in 4 parts and add to the pan, together with the green peas.
Let it cook for some minutes on medium heat, steering regularly. Then, add half a cup of soy cream and some black pepper and keep steering for one minute on low heat.
In the meantime, cook the pasta in boiling water with some salt. Once cooked, drain it and add to the pan with the remaining ingredients. Stir well and serve. Top it off with some fresh parsley and enjoy!

OUR (ITALIAN) TIP: When you drain the pasta, always leave a bit of water in it; this will help the mixing process and will make your final dish super creamy without the need of extra cream or fat!
